Instead of continuing to buy the Greek Orzo Salad at Whole Foods, I decided to try my hand at making it.
Greek Orzo Salad (adapted from Whole Foods)
- Cooked orzo
- Cubes of feta cheese
- Fresh spinach (and basil)
- Diced bell pepper
- Sliced kalamata olives
- Sliced sun-dried tomatoes
- Sauteed shallots (instead of red onion)
Toss with olive oil, rice wine vinegar, salt, pepper.
