Take that, Whole Foods!

Instead of continuing to buy the Greek Orzo Salad at Whole Foods, I decided to try my hand at making it.

Greek Orzo Salad (adapted from Whole Foods)

  • Cooked orzo
  • Cubes of feta cheese
  • Fresh spinach (and basil)
  • Diced bell pepper
  • Sliced kalamata olives
  • Sliced sun-dried tomatoes
  • Sauteed shallots (instead of red onion)

Toss with olive oil, rice wine vinegar, salt, pepper.
