Don’t you love it when bananas start to get too ripe? Time for banana bread! Family recipe edition.
Carole’s Banana Bread
- 1 1/3 cup flour
- 1/4 tsp salt
- 1 tsp baking soda
- 3/4 tsp baking powder
- 2/3 cup sugar
- 1 tsp lemon juice
- 3/4 stick unsalted butter (3 oz.)
- 1 1/4 cup mashed bananas (about 2 1/2 large bananas)
- 2 eggs
- 1 tsp vanilla (optional)
- 1 cup of chocolate chips (optional – I’m guessing on the amount. Whatever looks right to you is fine with me.)
Preheat oven to 350.
Mix flour, salt, baking soda, and baking powder. Set aside.
Process sugar, lemon juice, and butter for 20 seconds in food processor.
Add mashed bananas. Process for 5 seconds.
Add eggs and vanilla. Process for 5 seconds.
Add dry ingredients. Pulse 4 or 5 times.
Mix in chocolate chips
Bake about 1 hour.
And why are we going bananas, you ask? The attractive nuisance just finished his 2L year! Woohoo!
